6 boneless chicken breasts 1/2 c oil 1 md onion; diced 1 green bell pepper; chopped 1 bay leaf 1 1/2 c rice; uncooked 1 cn whole peeled tomatoes 5 c water 2 ts salt 1/4 ts pepper 1 turmeric
Instructions
Brown chicken in shortening. Remove and drain on paper towels. Add onion and green bell pepper to oil and cook until vegetables are tender. Add salt, pepper, bay leaf, tomatoes and water. Cook 5 minutes over low heat. Add rice and turmeric. Pour in casserole dish, place chicken breasts on top of rice mixture. Bake in a 350 degree oven for 25-30 minutes, making sure rice is completely done.
SERVING SUGGESTION: Serve with hot rolls and ambrosia salad.
