1 1/2 sticks butter 2 c carrots, chopped 2 c celery, chopped 2 c onion, chopped 1 flour 1 salt/pepper to taste 8 c chicken broth 2 lb velveeta cheese 10 oz sharp cheddar cheese 2 cans (24 fl oz) beer
Instructions
Melt butter in a large pan. Then add chopped carrots, onion and celery and saute until tender. Add enough flour up butter, then add chicken broth. Bring to a boil stirring constantly. Add cheese slowly (still stirring constantly). When the cheese has melted, take off burner and add beer slowly, it tends to foam quite a bit.
