1 lb lima beans, frozen 1 sm scallion, left whole 2 sprigs mint 1 bay leaf to taste salt and pepper DRESSING 1 tb olive oil 1 clove garlic, minced 2 ts mint, chopped 1 tb parsley, chopped 1 tb thyme, chopped to taste salt and pepper 1 tb Dijon mustard 1/4 c white wine vinegar
Instructions
Place lima beans in a medium saucepan. Cover with water. Add scallion, mint, bay leaf and salt and pepper to taste. Cover and simmer 15 - 20 minutes or until beans are tender. Drain and discard herbs. To prepare the dressing: Whisk together all dressing ingredients. Toss limas with dressing. May serve hot or cold.
