1 c cooked rice 2 tb French salad dressing 1 lb shrimp; cooked 1/4 c finely chopped celery 3/4 c finely chopped cauliflower 1 tb chopped onion 1/4 c chopped green bell pepper 1 tb lemon juice 1/3 c mayonnaise 1 ts salt
Instructions
Combine rice and salad dressing in a large bowl. Stir well. Peel and devein shrimp. Chop into bite-size pieces. Add to bowl. Add celery, cauliflower, onion, and bell pepper to bowl. Stir well. Add lemon juice, mayonnaise, and salt to bowl. Stir well. Cover; chill until serving time.
VARIATION: For a tasty tropical twist, add a small can of pineapple chunks, drained
